So I can't go telling everyone to buy skin-on chicken and then not tell you what to do with the skin after you take it off. My kids think this snack is better than the actual meal that the chicken is used for.
Ingredients
- Chicken skin, taken off of whatever chicken parts you needed skinless
- Salt & Pepper (or any seasoning rub/mix that has no sugar in it)
Directions
Preheat oven to 375 (with convection, if you have it.) Spread the chicken skin out on a rimmed baking sheet. Season with a little salt and pepper (not too much, they will shrink a lot as they cook.) Bake for 20 minutes, using tongs and a metal spatula to unstick the skins from the pan every 5 to 7 minutes. Once they are deep golden brown, remove from oven and use tongs/spatula to remove skins from the tray and place on a paper-towel lined plate or sheet pan. Allow to cool for as long as you can stand - I normally last about 30 seconds and burn my tongue, but it's so worth it! Disclaimer: please wait 5 minutes and don't burn yourself!
