Guava Cake (ok, it was POG cake)Butter Mochi
Butter mochi is such a wonderfully soft and chewy dessert. I love that I can pick it up and squish it before popping it in my mouth. It's not super sweet. I hesitate to call it a cake but it sure looks like one.
- 1 box mochiko/sweet rice flour (Koda Farms)
- 2 cups sugar
- 2 tsp baking powder
- 4 eggs
- 1/4 cup butter melted
- 2 cups milk
Preheat the oven to 350℉.
Grease a 9x13 pan.
Mix dry ingredients in a large bowl.
Add eggs and milk, then mix well.
Mix in butter.
Put the mixture into the pan then bake for 40-50 minutes.
Check with a toothpick for doneness.
Store in an airtight container at room temperature for up to 2 days
