Butter Mochi

The sisters of our ward had a luau this week. We some enjoyed some tasty dishes. I've included the link for some of the recipes.

Butter Mochi 
 
Butter mochi is such a wonderfully soft and chewy dessert. I love that I can pick it up and squish it before popping it in my mouth. It's not super sweet. I hesitate to call it a cake but it sure looks like one.
  • 1 box mochiko/sweet rice flour (Koda Farms)
  • 2 cups sugar
  • 2 tsp baking powder
  • 4 eggs
  • 1/4 cup butter melted
  • 2 cups milk
Preheat the oven to 350℉.
Grease a 9x13 pan.
Mix dry ingredients in a large bowl.
Add eggs and milk, then mix well.
Mix in butter. 
Put the mixture into the pan then bake for 40-50 minutes.
Check with a toothpick for doneness.

Store in an airtight container at room temperature for up to 2 days
